Mille-feuille cake recipe (рецепт Наполеона)

Hi everyone! I would like to share with you the Mille-feuille cake recipe (aka the Napoleon cake), which I made back in September, for my husband's Birthday. I completely forgot to post the receipt back then :) The recipe is very simple, the pastry soakes in the cream very fast, and the taste is absolutely amazing! You can leave the cake in its original version or, if you want it to be more festive, you can decorate it with some berries as did I:)

Испекла этот чудесный тортик еще в сентябре, на День Рождения мужа, но делюсь рецептом только сейчас - совершенно про него забыла :) Рецепт очень простой, торт пропитывается быстро, а на вкус - ну просто объедение! Можно оставить в классическом варианте - обсыпанный крошкой, а если хочется праздничный вариант, то можно украсить ягодами, как это сделала я :)


Ingredients:

for the pastry:
3 cups of flour
250 g of butter
3/4 cup of very cold water
1/2 tsp of baking soda
for the cream:
200 g of sugar
500 ml of milk
4 yolks
some vanilla powder
2 tbsp of flour
First, let us make the pastry. Add butter to flour and chop it into very small pieces (almost like crumbs). Add water and mix, then add baking soda and mix again. Put the dough in the fridge for an hour. Meanwhile, make the cream. Bring milk to a boiling point. Mix well the yolks from the eggs with sugar, vanilla powder and flour in a pot. Pour the milk in very slowly into the pot, mix gently and put the pot on low heat. Cook until the cream is thick, approximately for 5-6 minutes. When it is ready, take the dough (which should have been in the fridge for about an hour at this point in time) and divide it into 7 equal parts. Roll them on a baking sheet and bake each part for 4-5 minutes at 390F (200C). Cut the parts into even circles, spread each layer with cream. Use the leftover pieces of dough (which you cut away to make the round layers) to cover the sides of the cake. Let the cake stay in the fridge for at least a few hours. I left it overnight. Decorate the cake before serving with berries, etc.

Ингредиенты:
для коржей:
мука - 3 ст.
масло сливочное - 250 гр
вода (очень холодная) - 3/4 ст.
сода - 0,5 ч.л.
для заварного крема:
сахара - 200 гр
молоко - 500 мл
желтки - 4 шт.
ванилин
мука - 2 ст.л.
Сначала приготовим тесто для коржей. Муку просеять в посуду, в нее добавить масло, порубить до мелкой крошки. Добавляем воду и вымешиваем, добавляем гашеную соду. Еще немного вымешиваем и на часок убираем в холодильник. Тем временем можно сделать заварной крем. Молоко вскипятить, желтки растереть с сахаром, ванилином и мукой. В полученную смесь тонкой струйкой влить молоко и поставить смесь на медленный огонь. Варить до загустения, примерно 5 -6 минут. 

Через час достаем тесто и разделяем на 7 одинаковых частей. Раскатываем на листах и ставим в разогретую до 200 градусов духовку. Выпекать каждый корж 4 -5 минут. Обрезаем лишнее и смазываем коржи кремом. Срезанные части от коржей измельчаем и обсыпаем ими торт, включая боковые стенки. Даем настояться торту как минимум несколько часов, я оставляла на ночь. Перед подачей украсить по желанию.
